EGG BURJI

 

(Scrambled egg preparation in Indian style)

Preparation time—5-7 minutes                                 Cooking time—10 minutes

Serving—2-3                                                               Category—breakfast dish

INGREDIENTS

  • Eggs                                                                                  4
  • Onions, chopped                                                         2 medium
  • Tomato, chopped                                                        1medium
  • Green chillies, chopped                                             2tsp
  • Cumin seeds                                                                    ½ tsp
  • Turmeric powder                                                         a large pinch
  • Coriander leaves chopped                                       1tbsp
  • Salt                                                                                     to taste
  • Oil                                                                                       2tbsp

METHOD

1-Beat eggs in a bowl and keeps aside.

2-Heat oil in a non-stick pan, add cumin seeds, as seeds crackles, add onion and partly cook it.

3-Stir in green chillies and turmeric powder.

4-Add chopped tomatoes and stir cook till tomato mashed completely.

5-Then add eggs and salt, stirring continuously till the mixture separates in small pieces .

6-Mix in coriander leaves and serves hot with toasted bread or parantha.
