EXOTIC VEGETABLES IN PLUM SAUCE

EXOTIC-VEGETABLES IN PLUM SAUCE

(Assorted veg. cooked in plum sauce)

INGREDIENTS

  • Yellow zucchini-1 small
  • Green zucchjni-1 small
  • Red bell pepper-1
  • Yellow bell pepper-1
  • Broccoli, florets-  1cup
  • Baby corns-4-5
  • Oil-            1tbsp
  • Salt-to taste

FOR SAUCE

  • Plum, chopped and pureed-10-12
  • Garlic ,chopped-1tsp
  • Ginger,chopped-1tsp
  • Green chillies,chopped-1tsp
  • Vinegar-1tbsp
  • Red chilli sauce-2tsp
  • Corn starch-2tbsp
  • Honey-2tbsp
  • Salt-to taste
  • Oil-            1 tbsp

METHOD

1-Cut the yellow and green zucchini, peppers into about 2inches thick strips.

2-Quarter the baby corn and cut into about two inches strips.

3-Heat oil in a wok or kadhai  over medium heat, add garlic sauté till brown ,stir in ginger and green chillies ,add  plum puree, chilli sauce ,honey and salt .Stir it well ,add one  cup of water and  cook on medium heat for about12-15 minutes.

4-In the meantime ,heat 1tbsp of oil in a another wok or kadhai,add all the vegetables and salt, toss the vegetables, sprinkles little water  ,mix  well and let it cook for 3-4 minutes..

5-Now mix ½ cup of water with corn starch and add (gradually) to the sauce over medium heat, stir constantly.

6-Strain the sauce over the vegetables, add vinegar, adjust the seasoning and continue to cook until the vegetables are tender.

7-Remove from the fire and serve hot.
