VEGETABLE TAHARI

   (Assorted veg. cooked with rice)

Preparation time—20 minutes                                   Cooking  time—25-30 minutes

Serving—4                                                                        Category—veg.

INGREDIENTS

  • Rice(basmati)- 2 cups
  • Potato-1 medium
  • Cauliflower, florets-½ medium
  • Green peas, shelled-½ cup
  • Cumin seeds-1tsp
  • Garlic, chopped-1tsp
  • Onion, sliced-1 medium
  • Green chillies, chopped-2-3
  • Bay leaf-1
  • Garam masala-1tsp
  • Turmeric powder-1tsp
  • Red chilli powder-1tsp(
  • Salt-to taste
  • Oil-            2tbsp

METHOD

1-Soak rice in 4 cups of water for 20 minutes and keeps aside.

2-Heat oil in a vessel, crackles cumin and bay leaf, add onions and garlic and sauté till light brown.

3-Stir in green chilies and turmeric powder, add potato, cauliflower and green peas and stir cook on medium heat for2-3  minutes.

4-Add rice, red chilli powder, garam masala and salt along with 4 cups of water.

5-Stir cook until its start boiling   then cover and cook on medium heat for about 20 minutes or till rice is done.

6-Serve hot with desi ghee or curd or with both.
