JARDALOO MA MUUGHI

 

[Fruity flavored chicken with other spices]

Preparation time—1-2 hours                                        Cooking time—40 minutes

INGREDIENTS

  • Chicken                                                                     800 gm
  • Dry apricots                                                            150 gm
  • Onions, chopped                                                    3 medium
  • Cinnamon                                                                  1 small stick
  • Bay leaf                                                                       1
  • Ginger, garlic paste                                               1 tbsp
  • Tomatoes, chopped                                               3 medium
  • Sugar                                                                            1 tsp
  • Vinegar                                                                       2 tbsp
  • Coriander leaves chopped                                   1 tbsp
  • Salt                                                                                 to taste
  • Oil                                                                                    4 tbsp

FOR GRINDING [MASALA]

  • Red chilies                                                                    8-10
  • Coriander seeds                                                          2 tsp
  • Cumin seeds                                                                  1½  tsp
  • Turmeric powder                                                        ¼ tsp
  • Cinnamon                                                                       1 small stick
  • Cloves                                                                              3
  • Green cardamoms                                                      4

METHOD

1-Soak the apricots in hot water until soft, but not mushy. Remove the stones and set aside.

2-Cut chicken into 8-10 pieces, prick each piece several times with fork and set aside.

3-Grind the masala to a smooth paste using little water and set aside.

4-Heat oil in a heavy bottom pan, stir in bay leaf, cinnamon and onions and fry till brown, add ginger, garlic paste and sauté till raw flavor gone.

5-Add tomatoes and salt, sauté till tomatoes mashed. Add ground paste and continue cooking till oil surfaces.

6- Add in chicken pieces and stir cook for 5-6 minutes, add apricots and mix well. Add 2cups of water, bring it to boil, and then simmer till chicken is almost done.

7-Mix in sugar and vinegar and cook for 3-4 minutes or till the desired consistency.

8-Adjust the seasoning, remove from the fire and serve hot garnished with coriander leaves.
