PANEER KATHI ROLL

(Cottage cheese cooked in aromatic onion and capsicum gravy and wrapped in wheat flour chapattis)

INGREDIENTS

  • Whole Wheat flour chapatis (thinly rolled)-8
  • Oil-2tbsp
  • Garlic, chopped-1tsp
  • Onion, Chopped- 1 medium
  • Green chillies, chopped-2
  • Tomatoes, chopped-2 medium
  • Ginger, shredded- 1 tsp
  • Capsicum, chopped-1 medium
  • Paneer, small cubes-1 cup
  • Turmeric powder-½tsp
  • Red chilli powder-½tsp
  • Garam masala-½ tsp
  • Coriander and mint chutney-4 tbsp
  • Onion rings-to serve
  • Chat masala-to serve
  • Salt –to taste

METHOD

1-Heat oil in a non-stick pan over medium heat, add garlic and sauté till light brown. Add ginger and onions and sauté for a minute.

2-Add tomatoes and turmeric powder, mix well and sauté for about two minutes. Stir in chopped capsicum, red chilli powder, garam masala and salt.

3-Add paneer cubes. Mix well and continue to cook for another 2-3 minutes.

4-Remove from the fire and divide the paneer filling into eight equal portions.

5- Place a chapatti on clean dry surface spread a spoonful of chutney evenly on it.Now takes a portion of filling and spread in the centre.

6-Sprinkle little chat masala and onion rings and roll it tightly, likewise prepare the rest of the rolls.

7-just before serving, heat the tawa(flat bottom),warm up the rolls, cut each roll into 3-4 pieces and serve hot.
