[A delicious tandoori cauliflower preparation]

1-Cauliflowers                                                          2small flowers

2-Gram flour [besan]                                           1cup

3-Red chilli powder                                              2tsp

4-Jeera [cumin] powder                                   1tsp

5-Lemon juice                                                         2tbs

6-Ginger, garlic paste                                         2tsp

7-Turmeric powder                                             ½ tsp

8-Garam masala                                                   ½ tsp

9-Carom [ajwain] seeds                                   ½ tsp

10-Chat masala                                                     3tsp

11-Oil                                                                          to fry

12-Salt                                                                       to taste


1-Break the cauliflower into florets, wash thoroughly and then dry.

2-Sprinkle the mixture of salt, 2tsp of chat masala, carom seeds, cumin powder and lemon juice over the cauliflower florets.

3-Mix together besan, garam masala, red chilli powder, turmeric and ginger, garlic paste with one and half cup of water to form a smooth batter.

4-Heat oil in a frying pan, dip the florets into the batter and deep fry in hot oil over a medium low heat.

5-Remove and cool it. Then cut into two pieces.

6-Put on skewer and roast in tandoor for 4-5 minutes till golden brown or roast in preheated oven at 200*C for 5-6 minutes.

7-Arrange in a serving plate, sprinkle remaining chat masala and serve hot with salad and mint chutney.
