VADA PAV

(One of the popular street food of Mumbai)

INGREDIENTS

  • Pav-8
  • Boiled and mashed potatoes-6 medium
  • Mustard seeds-1tsp
  • Green chillies,finely chopped-1tsp
  • Ginger,chopped-1tsp
  • Garlic,chopped-1tsp
  • Asafoetida(hing)- ¼tsp
  • Turmeric powder-½ tsp
  • Salt-to taste
  • Oil-1tbsp

FOR OUTER COVERING

  • Bengal gram flour(besan)-1 cup
  • Soda bicarbonate-a pinch
  • Red chilli powder-½ tsp
  • Turmeric powder- ½tspSalt-to taste
  • Oil- for deep frying

METHOD

1-Batter for outer covering–To make the batter, take gram flour in a bowl. Add soda, red chjlli powder, turmeric powder and salt and mix.

2-Add sufficient water and make a smooth and thick batter. Set aside for 15 minutes.

3-Heat 1tbsp of oil in a pan, add mustard seeds, as mustard seeds crackles, stir in hing and turmeric powder .Add green chilies, garlic and ginger and sauté for a few seconds.

4-Add the potatoes and salt and mix well.

5-Remove from the fire and cool. Divide the mixture into 8 equal portions and shape each portion into a balls.

6-Heat sufficient oil in a kadhai.Dip each ball in the prepared batter, coat it nicely and deep fry the vadas till golden and crisp.

7-Drain on absorbent paper and keep aside.

8-Now slice each pav into half and apply some dry garlic chutney inside.Place one vada in each pav and serve.
