VENDAKA MASALA PACHCHADI

 

INGREDIENTS:

1- LADY FINGER (500gm)

2- COCONUT MILK (1/4cup)

3- GROUNDNUT (1tbs)

4- CORIANDER POWDER (2tsp)

5- CURRY LEAVES (1 Spring)

6- GRATED COCONUT (2tbsp)

7- OIL (To Fry)

8- ONIONS (CHOPPED) – 3(100gm)

9- RED CHILLY POWDER (1tsp)

10- MUSTARD SEEDS (1/2tsp)

11- RED CHILLY (2)

12- TOMATO(CHOPPED) – (150gm)

13 – TURMERIC POWDER (1/2 tsp)

14-  URAD DAAL (2 tsp)

15-   CURD (1/4cup)

16-   SALT (To taste)

METHOD:

1-Wash,dry&cut lady fingers into 1 inch. pieces.

2-Heat the oil a pan and deep fry the lady finger till it becomes crispy and reserve rest of the oil drain&keep it aside .

3-Grind together groundnuts & grated coconut with coconut milk and to make smooth paste.

4-Heat 2 tbsp of the reserved oil, add mustard seeds,urad dal,whole red chilly&curry leaves.

5-When mastard seeds crackles ,add onion fry till golden brown in colour.

6-Put chopped tomatoes ,salt,stir it,add red chilly powder,turmeric powder coriander powder&salt stir it for another 2-3 minutes.

7-Reduce the flame,add the coconut paste&stir again for 2 minutes.

8-Remove from the fire,add whished curd ,stir add 1/2 cup of water.simmer it for few minutes.

9-Add lady finger&cook till gravy becomes semi dry.

10-Serve hot with boiled rice.
